Winemaker's Notes
On the nose, this Viognier from Saralee's Vineyard has a delicate perfume of honeysuckle, orange blossom, and even a hint of orange sherbet with vanilla ice cream. On the palate, the full-bodied flavors are incredibly concentrated and luscious with creamy vanilla, dried apricots and subtle notes of spice in the background. There is a silky, viscous texture in the mouth and a lingering finish complemented by a touch of vanilla.
Vintage
The 2000 vintage gave us a relatively cool spring and a warm summer growing season. In August, just as we thought harvest was about to begin, we experienced scattered showers and cooler temperatures, which slowed down harvest for many varieties. However, because Viognier is typically harvested sometime in mid-September, this change of weather did not affect this variety, which we feel has turned out beautifully!

Fermentation & Aging
This wine was 100% malolactic fermented and aged in seasoned French oak barrels for 5 months. We chose to use seasoned rather than new oak barrels because we did not want to overpower Viogniers hallmark of inviting aromas and a rich, full-bodied palate of fresh fruit flavors by too much oak complexity.
Chef's Suggestions
Our Viognier will compliment poultry or seafood seasoned with tarragon, basil, fennel or even Cajun spices. It makes a delicious addition to most Thai dishes, and is wonderful with a simple, seared pepper crusted tuna steak.
