1997 Arrowood  Cabernet Sauvignon Réserve Spéciale

Winemaker's Notes
It is said that the great Cabernet Sauvignon grape provides the perfect platform for individual vintage characteristics and winemaking practices. Cabernet wines also tend to reflect a vineyards soil, physical setting and climate, all of which constitute a terroir. While we used grapes from Dry Creek Valleys Handmaker and Justice Ranches and Alexander Valleys Belle Terre and Hoot Owl Creek Vineyards and Petersen Ranch, most of the fruit for our 97 Reserve Cabernet Sauvignon was picked at Smothers-Remick Ridge Vineyards and Wildwood Vineyards. Both of these Sonoma Valley vineyards are located on hillsides with efficient drainage, which yields richer, more complex fruit. They also feature mature grapes with very intense varietal flavors. This terroir, along with an excellent vintage and our non-interventional winemaking style, have combined to create a wine that is remarkable in its fruit and intensity, full-bodied, and a stunning success.

The 1997 vintage was one of the decades best, rivaling the outstanding 94 vintage. Thanks to Mother Nature's cool weather in September and October we were able to let the grapes mature on the vine a little longer. The result was that the grapes all ripened at once and we had to scramble to find enough storage for the fruit. That is a small price to pay, though, for sticking to our philosophy of picking grapes when we feel they are physiologically mature.

This Reserve Cabernet Sauvignon has a deep purple color that is so opaque it borders on black. The nose and palate are both packed with a bounty of dark, intense fruit. Aromatics include blackberry, cassis, and plum, with notes of cedar box and spice. Rich flavors of black cherry and anise delight your palate, finishing up with a touch of toasty oak. Just the right balance of fruit and tannins lend enough structure for this wine to age gracefully for many years in your cellar.

The 1997 Reserve Cabernet Sauvignon is 100 percent Cabernet Sauvignon. Separate lots were aged for nearly two years in French and American oak barrels then blended together and aged an additional five months in French oak barrels. The wine was neither fined nor filtered. Whether you drink it now or lay it down for a decade, we have a feeling youll be singing its praises too.

Enjoy this Reserve Cabernet Sauvignon with dishes of robust flavor. A rich broth or grilled meat and vegetables will pair very well, or just sip it with or a mild cheddar or dry Monterey Jack cheese.
