1996 Arrowood  Cabernet Sauvignon Réserve Spéciale

Blend: 99% Cabernet Sauvignon, 1% Merlot

Winemaker's Notes
The final blend is 99 percent Cabernet Sauvignon and one percent Merlot, resulting in a beautiful deep purple and ruby colored wine with incredible depth and flavor. While the nose is complex, with blackberry and plum fruit, spice and notes of cedar in the background, on the palate, the wine spills over with rich blackberry and cherry fruit flavors and cassis. The toasty oak and spice flavors combine to provide a wonderfully pleasing finish.

Vineyard
The vast majority of the fruit for our 1996 Reserve Cabernet Sauvignon was harvested from Sonoma Valleys Wildwood Vineyards and Smothers-Remick Ridge Ranch, Dry Creek Valleys Handmaker Ranch and Justice Vineyards, and a small amount from Hoot Owl Creek and Belle Terre Vineyards in Alexander Valley. Most of these estates are hillside vineyards with good drainage, yielding a richer, more complex fruit. They also feature older vines that yield mature grapes with very intense varietal character. These conditions combine to make this wine both bold and accessible, with prime ageability. To ensure that the wine retains its deep fruity flavor as it softens over the next decade or so, the delicious fruit is balanced by firm, yet approachable tannins.

Fermentation & Aging
Each vineyard lot for our Reserve Cabernet Sauvignon was aged separately for 23 months in French and American oak barrels. After racking and blending they were returned to barrels for an additional five months of aging (giving us a grand total of 28 months in the barrel!). Befitting our non-interventional winemaking philosophy to express maximum complexity, the wine was not fined or filtered prior to bottling.
